Who are the Boxty Bakers?

The Boxty Bakers Story:

As children our mother made Boxty for us , she used her mother’s recipe and upheld the traditions of using only the finest local ingredients to produce fresh tasty and delicious Boxty.

What is Boxty?

Boxty is a substantial, starchy potato based product, primarily found in counties Leitrim, Fermanagh, Cavan & Mayo. Traditionally Boxty was made at home at the hearth with a pan and crook. Boxty can be traced back to pre-famine times, when it added variety to a constant diet of potatoes, the staple food source of that period.

How do we make Boxty Today?

As Padraig our Head Baker says himself:

“Handmade like our mother made it, the way her mother made it”
